“We have space and we want to create a restaurant that doesn’t exist yet. No menu, just good things on a skewer and great drinks.” This was the brief not only to the architects from the CollColl studio, who took on the interior design, but also to the entire team behind Špejlí.
Come and see how we did it.
A few words about us
Concept
Do you like places with a sense of humor, great interior and delicious food? Špejle is exactly that. Our concept is based on popular sandwiches, as a quick and high-quality meal that is suitable at any time of the day or night.
Knedlozelevřo as a sandwich? Yes, with us. But also with goat cheese, prosciutto, pesto, beetroot, cold, salty and sweet!
We change the menu according to the season and time of day, so breakfast, lunch and dinner, but always on a skewer.
Food
Choose with your eyes and according to your mood. Our menu is divided into three sections: cold, hot and sweet. We are truly obsessed with skewers, you will find them in every portion. You will not find a menu here, but you will find a bar full of tapas, fresh sandwiches and canapés. We bake our own pastries and we also carefully select seasonal ingredients. Our menu changes throughout the day and according to the season.
For drinks, we offer homemade lemonades, cocktails, beer specials and carefully selected wines including sparkling wines and Champagne. There is also excellently prepared coffee. We pride ourselves on having one of the widest ranges of Gin & Tonic flavor variations in Prague.
Špejle
A skewer (Špejle) is a thin, round wooden stick, most often used as a skewer, for skewering morning glory, birds or outside the kitchen, for example, for creating models. For us, a skewer is a design, a joke and a receipt. We are truly obsessed with skewers, you will find one in every portion. Collect the skewers from sandwiches in a rack that you will find on each table. We charge according to the number of skewers collected and one costs 39 CZK.
Skewers are eaten with your hands and sinks can therefore be found in several places right in the bistro. Lockers resembling school lockers hide sockets with chargers for mobile phones.
